Meatballs


2 lbs lean ground turkey (lean ground beef would be fine too)
3 egg whites
3/4 cups whole wheat bread crumbs
1/3 cup water
3/4 of an onion, finely chopped
3 cloves garlic, minced
1/3 cup dried parsley
3 tsp dried basil
1 1/2 tsp ground pepper

Preheat oven broiler.

Just mix all ingredients thoroughly in a large bowl (the hands work best -- blaaaaah! I hate that part!).  Shape into balls about 1 1/2 inch in diameter.

Line a baking sheet with tin foil and spray with nonstick cooking spray.  Arrange meatballs on baking sheet, then place under broiler for a total of 12-15 minutes.  After about 6 minutes, remove from oven, rotate the meatballs, then put them back in the oven until they are cooked on all sides.

Makes around 60-65 meatballs at 27 calories per meatball.

Chicken Vegetable Flat Bread Pizza


1 Flatout Flatbread, Light
3 oz baked chicken, sliced (find recipe here)
1/3 cup tomato sauce (I used Classico Tomato Basil)
1 zucchini, sliced
1/8 cup red onion, sliced
seasoning blend, reduced sodium (I use Morton's)
oregano
2 Tb mozarella cheese, reduced fat

Preheat oven to 350 degrees. Cook Flatout bread directly on oven grate for 7 minutes.

While bread is cooking,  put vegetables in a microwavable bowl.  Add about 1 inch of water, cover, leaving a slight crack for steam to escape.  Zap in the microwave for 3 minutes.

When flat bread is done, remove carefully from oven.  Top with tomato sauce, vegetables then sprinkle with oregano and seasoning blend.  Add sliced chicken and mozzarella cheese.

Put pizza back in oven for 7 minutes.  Remove carefully from oven.

289 calories.

Peaches and Cream


1 medium peach
1/2 non-fat greek yogurt
dash of cinnamon
1 Tb flax seed
1 packet of stevia

Just throw it all in a bowl and eat!

Chocolate Oatmeal

1/4 cup rolled oats, uncooked
1/2 cup skim milk
1/2 cup water
1 scoop chocolate 100% Whey Protein Powder
1 Tb peanut butter, all natural
2 packets of stevia

In a large (I'm talking LARGE) bowl, mix the oats, milk, water, and protein powder.  Zap in the microwave for 4 minutes.  

Remove from microwave and stir in stevia and peanut butter.

345 calories.

Zucchini Brownies

adapted from Fit Momma Aimee

1 3/4 cup whole wheat flour
1/3 cup baking cocoa
1/2 tsp baking soda
1/2 tsp salt
3 cups zucchini, shredded (about 2 or 3 zucchini, depending on size)
1 egg
3/4 sugar
3/4 brown sugar
1/2 cup plain yogurt, non-fat
1/2 applesauce, unsweetened
1 tsp vanilla
1/2 cup mini chocolate chips, semi-sweet

Mix all ingredients minus the chocolate chips until combined.  Spread evenly into a greased 9x13 pan.
Sprinkle chocolate chips over top of batter.

Cook at 350 degrees for 45 - 50 minutes.  To check, insert toothpick and it should come out clean.

Trainer Momma Tip:  ** This must cool COMPLETELY before you cut and eat it.  I like to make it at night, let it cool overnight, then serve it the next day.  It just doesn't taste the same warm.**

Makes 28 bars.  100 calories per bar.

Chicken Melt with Veggies


1 English muffin, 100% whole wheat
3 oz spicy chicken breast, baked (find recipe here)
.5 oz provolone cheese
dash of oregano
dash of red pepper flakes, to taste
2 Tb avocado
a few slices of red pepper, red onion, tomato and whatever else floats your boat

Take the English muffin, slice it in half and toast it.  Smash some avocado on each side of the muffin. then divide the chicken and cheese in half and place in on the two halves.  Zap it in the microwave until cheese it melted, around 45 sec - 1 minute.  Remove from microwave, sprinkle with spices, and load up your sandwich with plenty of veggies.

Fiesta Breakfast


3/4 cup Egg Scramblers
1 corn tortilla
2 Tb salsa
2 Tb Monterey Jack cheese, reduced-fat

Scramble the the Egg Scramblers over the stove.  Mix in salsa, then place on top of a corn tortilla.  Top with Monterey Jack cheese.
