Whole Wheat Cornbread


1 cup yellow cornmeal
1 cup whole wheat flour 
3 tablespoons sugar or honey
1/2 tsp salt
4 tsp baking powder
1 cup skim milk
1 egg, slightly beaten
2 Tb canola oil
2 Tb applesauce, unsweetened

Mix all ingredients until combined.  Spray nonstick cooking spray into muffin tins, a 9X9-inch pan, or mini-loaf pan (that's what I always use).

Bake at 400 degrees for about 12-14 minutes for the muffins (a bit longer for the pan).

Makes 10 mini-loaves at 150 calories per loaf.  I slice them through the middle horizontally and just serve 1/2 a loaf at 75 caloroes a piece.

Makes 12 muffins at 125 calories a piece.
